Vinification of the Graf Neipperg Trollinger Winery
The basis for the elegant Trollinger from Württemberg are grapes from the Trollinger grape variety. In Württemberg, the vines that produce the grapes for this wine grow on soils made of clay. After the grapes are harvested, they are immediately taken to the winery. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, the Trollinger is allowed to further harmonize on the fine lees for a few months.
