The Auxerrois from the wine-growing region of Baden appears in the glass in a brilliant shimmering hue. Poured into a white wine glass, this white wine from Germany offers wonderfully fragrant aromas of apple, nashi pear, peach and mirabelle plum, rounded off by green peppers, lovage and Mediterranean herbs.
This dry white wine from Klumpp is for wine drinkers who can't drink their wine dry enough. The Auxerrois already comes quite close to this, it was pressed with just 5.2 grams of residual sugar. Due to its vital fruit acidity, the Auxerrois is wonderfully fresh and lively on the palate.
Vinification of the Auxerrois from Klumpp
This wine clearly focuses on one grape variety, Auxerrois. For this exceptionally elegant varietal wine from Klumpp, only first-class grapes were harvested. The grapes grow under optimal conditions in Baden. Here, the vines dig their roots deep into soils of loam and loess. At the time of optimal ripeness, the grapes for the Auxerrois are harvested exclusively by hand without the help of coarse and less selective machines. After the hand harvest, the grapes are immediately sent to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Auxerrois can continue to harmonize on the fine lees for a few months....
Food recommendation for the Auxerrois from Klumpp
This German wine is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to spaghetti with yogurt-mint pesto, coconut-lime fish curry or asparagus salad with quinoa.
