The Vina AB Amontillado from Gonzalez Byass is a pure, balanced sherry from the Palomino Fino grape variety that grows in the Spanish DO Jerez wine region.
In the glass, this wine shimmers in a delicate amber color with golden yellow highlights. A fine, elegant aroma reveals itself to the nose. The bouquet has typical fino aromas of almonds and fresh yeast, complemented by hazelnuts and a subtle hint of oak wort. The palate is pampered by this dry sherry with fine woody aromas and hints of nuts. The balanced, fresh acidity harmonizes wonderfully with the salty mineral character. The finale comes with a pleasant length and subtle bitter notes and a breeze of sea salt.
Vinification of Tio Pepe Gonzalez Byass AB Amontillado
After carefully harvesting the Palomino Fino grapes in 15kg boxes, the harvested goods are immediately taken to the wine cellar of Gonzalez Byass. There the berries are completely destemmed and gently pressed. At low temperatures, this sherry is fermented and then sprayed onto a 15.5% by volume and placed in the uppermost barrel row of the Tio-Pepe brine. After maturation at Tio-Pepe-Solera, this sherry is transferred to its own Viña AB-Solera. After about 12 years of maturation, this sherry is filled into the bottle.
