Vinification of the Cuvee This Brut from Borgo Molino

The elegant Cuvee This Brut from Italy is a cuvée made from the Glera and Riesling grape varieties. The grapes grow under optimal conditions in Veneto. Here, the vines dig their roots deep into soils of sand, gravel and marl. After the harvest, the grapes are brought to the winery as quickly as possible. Here they are sorted and carefully broken up. This is followed by fermentation of the base wines according to the Metodo Ganymede. The resulting carbon dioxide is directed past the cap and blown in from the side so that the cap is thoroughly mixed. This not only ensures greater aroma extraction, the Co2 also ensures greater hygiene in the tank so that less sulphur needs to be added at the end.
