The elegant Cuvee This Brut from Italy is a blend made from the grape varieties Glera and Riesling. The grapes grow under optimal conditions in Veneto. The vines root deeply in soils composed of sand, gravel, and marl. After harvest, the grapes are quickly transported to the winery, where they are sorted and gently crushed. The base wines then undergo fermentation according to the Ganymede method. During this process, the carbon dioxide generated is diverted past the lees and side-injected so that the lees are well mixed. This not only ensures higher aroma extraction but also keeps the tank more hygienic with CO2, reducing the need for added sulfites in the end.
